  • 16 asparagus spears
  • 1/3 pound prosciutto slices
  • ½ cup raspberry jam
  • 2 tablespoons of balsamic vinegar


  1. Start by cutting the prosciutto slices into halves. Wrap each asparagus spear with a slice of prosciutto and secure the ends with toothpicks.
  2. On medium heat, grill the asparagus for six to eight minutes (until crisp).
  3. Remove the toothpicks.
  4. Mix the jam and vinegar in a small bowl. Microwave on high for 20 seconds until the jam is fully melted. Serve with asparagus as a dip or glaze.

Sweet Potato and Proscuitto Salad

  • 3 medium-sized sweet potatoes (peeled)

  • 1/3 cup pecans (toasted and chopped)
  • ¼ cup sweet red pepper (chopped)
  • 2 green onions (sliced)
  • 1 tablespoon lemon juice
  • 1 teaspoon honey


  1. Preheat the oven to 400°F.
  2. Cut the sweet potatoes into one-inch pieces and drizzle with two tablespoons of olive oil. Sprinkle with half the salt and pepper and toss to coat evenly. Roast for 30 minutes.
  3. Sprinkle the prosciutto over the sweet potatoes. Roast for an additional 15 minutes. Transfer to a bowl to cool.
  4. Add in radishes, red pepper, pecans, and half of the green onions.
  5. In a separate bowl, mix the lemon juice, honey, and the remaining olive oil and salt. Drizzle over the salad and toss until combined.
  6. Top with the remaining green onion.

  3. Drain the linguine and peas. Then add them to the pan and toss to coat evenly. Top with parmesan cheese.
